			<content:encoded><![CDATA[<p>I&#8217;m always on the lookout for interesting <a href="http://glutenfreerecipes.net/category/gluten-free-bread/">gluten free bread recipes</a>, and one I recently ran across caught my attention.   If you are looking to make gluten free soft buns, give the following recipe a try.</p>
<h3><strong>Gluten Free Soft Buns Recipe</strong></h3>
<p><em>Buns Ingredients:</em></p>
<ul>
<li>1 1/4 cups hot tap water</li>
<li>1 packet yeast</li>
<li>1/4 cup sugar</li>
<li>1/3 cup oil (I used canola)</li>
<li>1 egg</li>
<li>1 1/2 tsp baking powder</li>
<li>1 tsp salt</li>
<li>3 1/2 cups gluten-free flour blend (mine is a blend of rice flour, tapioca flour, xanthan gum, gelatin)</li>
<li>1/2 cup corn starch</li>
</ul>
<p><em>Buns Directions:</em></p>
<ol>
<li>Pre-heat oven to 415F.</li>
<li>Sprinkle the yeast over the hot water and stir gently to incorporate.</li>
<li>Add sugar and oil and let stand a few minutes.</li>
<li>In large mixing bowl place the egg and the other ingredients.</li>
<li>Add the yeast mixture and beat until well-blended, approx 1 minute. (Dough should be thick and sticky)</li>
<li>Scoop out 1/4 cup at a time of the dough and with well-greased hands, roll into balls and place on lined cookie sheets.</li>
<li>Place approx 1.5 inches apart and flatten into thick discs.</li>
<li>Set aside in warm place to rise for 15 minutes.</li>
<li>Bake for 15 minutes or until golden brown and the wafting smell of fresh-baked bread causes the insane urge to reach into the hot oven and grab a roll to shove into your drooling mouth.</li>
<li>Let cool 10-15 minutes and serve with butter and your choice of jam/jelly/honey/apple butter, etc.</li>

<h3><strong>Gluten Free Hot Cross Buns Recipe</strong></h3>
<p><em>Buns Ingredients:</em></p>

<li>1/3 cup sugar plus 2-teaspoons for yeast</li>
<li>2/3 cup powdered milk</li>
<li>3-1/2 teaspoons Xanthum Gum</li>
<li>1-1/2 teaspoons salt</li>
<li>2 teaspoons cinnamon</li>
<li>1-1/2 tablespoons rapid rise yeast</li>
<li>1/4 cup olive oil</li>
<li>Three eggs</li>
<li>1 teaspoon vinegar</li>
<li>1 cup yellow raisins</li>
<li>1/2 cup mixed peel (optional)</li>
<li>2 tablespoons melted butter</li>
</ul>
<p><em>Buns Directions:</em></p>
<ol>
<li>Dissolve 2-teaspoons sugar in warm water.</li>
<li>Add yeast and let proof.</li>
<li>Combine dry ingredients in bowl of mixer.</li>
<li>Mix eggs, oil and vinegar and add to dry ingredients.</li>
<li>Add proofed yeast and beat on high speed for three minutes.</li>
<li>Stir in raisins and mixed peel.</li>
<li>Grease two round pie pans.</li>
<li>Rice flour hands, cut dough in half, and roll eight buns per pie pan, placing one in the center and seven around.</li>
<li>With a knife blade dipped in rice flour, cut an X on top of each bun, and brush with melted butter.</li>
<li>Let rise in a warm place for 35-40 minutes.</li>
<li>Bake at 375-degrees for 30 to 35 minutes.</li>

<h3><strong>Gluten Free Hot Dog Bun Recipe</strong></h3>
<p><em>Bun Ingredients:</em></p>

<li>2 teaspoons baking powder</li>

<li>1/2 teaspoon of salt</li>
<li>2 eggs</li>
<li>1/3 cup vegetable oil</li>
<li>1/2 cup soy milk</li>
</ul>
<p><em>Bun Directions:</em></p>
<ol>
<li>Preheat oven to 400°F.</li>
<li>Mix together the dry ingredients.</li>
<li>Mix together the wet ingredients.</li>
<li>Combine the wet with dry.</li>
<li>Grease a cookie sheet, then shape dough into hot dog bun shapes if it’s sticky, wet a spatula and your hands a bit to form them.</li>
<li>Bake for about 12-15 minutes, until they start to brown.</li>

<p><strong>Gluten Free Soft Buns Recipe</strong></p>
<p><em>Bun Ingredients:</em></p>
<ul>
<li>4 ounces pineapple juice</li>
<li>1 cup water (120 degrees F)</li>
<li>5 tablespoons brown sugar, separated</li>
<li>2 tablespoons active dry yeast</li>
<li>1 cup potato starch</li>
<li>3/4 cup masa harina</li>
<li>3/4 cup sorghum flour</li>
<li>1/2 cup rice flour</li>
<li>1 tablespoon xanthan gum</li>
<li>5 tablespoons butter, separated and melted</li>
<li>1/2 tablespoon salt</li>
<li>1 egg</li>
<li>Gluten Free Flour (for dusting)</li>
</ul>
<p style="text-align: left;"><em>Bun Directions:</em></p>
<ol>
<li>Combine pineapple juice and water.</li>
<li>Add 2 tblsp brown sugar and all of the yeast. Stir to combine. If you put the yeast in too soon, the mixture will be too acidic and it will kill them, so be careful. Be sure your yeast is proofing before moving forward.</li>
<li>Combine flours, starches and gums in the work bowl of your favorite mixer.</li>
<li>Add salt, remaining brown sugar and 2 tblsp butter. Combine.</li>
<li>Add egg and combine. Last, add yeast slurry and combine until dough starts to climb the paddle. Switch to your hook and knead for 8-10 minutes on medium.</li>
<li>Using approximately 5 ounce portions, portion out your dough a piece at a time onto a floured work surface. Work just enough flour into each piece to be able to work it without it sticking to you and work each into a ball.</li>
<li>Place the balls on a baking sheet or in a baking dish and squish them until the are about 1/2 the height of the “ball.”.</li>
<li>Cover with a moist towel and allow your buns to rise for at least 90 minutes.</li>
<li>Set your oven to 350°F.</li>
<li>Brush on remaining butter and sprinkle on any toppings you like (sesame seeds?).</li>
<li>Bake uncovered for about 50 minutes or until they are showing really nice color and both the tops and bottoms look done.</li>
<li>Allow them to rest for 15 minutes to set their insides.</li>
</ol>
<p><em>Note:</em>  If the sesame seeds fell off, you may want to use an egg wash instead of just butter to ensure they stay properly.</p>

			<content:encoded><![CDATA[<p>To many people, eating a hamburger isn&#8217;t acceptable, or at least isn&#8217;t the same.  Unfortunately, for those confined to a gluten free diet, eating a standard hamburger bun isn&#8217;t acceptable. </p>
<p>If you have <a href="http://celiac-disease.com/">Celiac Disease</a> and would like to make your own homemade hamburger buns, here is a <a href="http://glutenfreerecipes.net/">gluten free recipe</a> you may enjoy:</p>
<p><strong>Gluten Free Hamburger Bun Recipe</strong></p>
<p><em>Bun Ingredients:</em></p>
<ul>
<li>1 1/4 cups water, 110 degrees</li>
<li>2 1/4 teaspoons yeast</li>
<li>1 teaspoon sugar</li>
<li>1 ounce chia seeds (2 tablespoons)</li>
<li>1/2 cup water</li>
<li>3/4 cup gluten free oats</li>
<li>1 cup almond</li>
<li>1 cup tapioca flour</li>
<li>1/2 cup arrowroot or potato starch or cornstarch</li>
<li>1/2 cup teff</li>
<li>1 1/2 teaspoons guar gum</li>
<li>2 egg, room temperature</li>
<li>2 tablespoons honey</li>
<li>3 tablespoons olive oil</li>
<li>1 teaspoon apple cider vinegar</li>
</ul>
<p><em>Baking Instructions:</em></p>
<ol>
<li>Butter 10 english muffin rings and place on parchment lined baking sheet.</li>
<li>In a small bowl stir sugar into 1 1/4 cups of water, sprinkle yeast on top, cover with saran wrap and set aside to bloom.</li>
<li>Stir the chia seeds into the 1/2 cup of water stir well. Three minutes later stir again then set aside.</li>
<li>Grind gluten free oats and almonds in coffee grinder until they are very fine.</li>
<li>Combine tapioca flour, arrowroot, teff, guar gum in the bowl of electric mixer. Add oats and almond flour and mix on low until well combined with no lumps.</li>
<li>In a small bowl mix eggs, honey, oil, cider vinegar and chia mixture.</li>
<li>Add to dry ingredients along with yeast mixture.</li>
<li>Blend on low speed until combined, push down sides of bowl with spatula then mix on medium high for 4 minutes. If too wet add a little more oat flour if too dry add water a teaspoon at a time until correct texture is reached.</li>
<li>Spoon into rings, smooth with the back of a damp spoon, sprinkle with sesame seeds if you like them.</li>
<li>Rise in a warm place until they are almost to the top of the rings (about 30 minutes).</li>
<li>Bake in a 400 degree oven for 20 to 30 minutes until they are deep golden brown with an internal temperature of 210 degrees.</li>
