Gluten Free Blueberry Scones

Are you a fan of scones?  For people following the gluten free diet, you may be interested in this gluten free recipe (also wheat free), courtesy of Pamela’s Gluten Free Mixes.

Gluten Free Blueberry Scones Recipe

Scones Ingredients:

  • 2 1/4 c. Pamela’s mix
  • 1 tsp. baking powder
  • 4 tbsp. butter
  • 2 eggs
  • 2/3 c. milk
  • 1/3 c. sugar
  • 1/2 c. currants (they used blueberries, and may have used more than this amount)

Scones Directions:

  1. Preheat oven to 375 degrees F.
  2. Mix the dry ingredients together.
  3. Cut in the butter using two knives.
  4. Add milk and eggs, combining all together with a fork. (Dough will be thick)
  5. Drop large, tall dollops of dough onto an ungreased baking sheet.
  6. Bake for15-17 minutes.

    These were delicious with a little variation! A little more raw sugar, and 2 tsp anise. 1/2 pkg of fresh blueberries. Divided the dough mixture in half and spread in round cake pans. Sprinkled a little more raw sugar on the top. Brushed with melted butter . They can be cut into triangles when baked in the cake pan…much better with a crispier texture. They really are a 5!!
