Gluten Free Salsa Chicken

Tired of eating plain chicken with your meals?   Here is a gluten free recipe for a salsa chicken that is pretty good.   Enjoy!

Gluten Free Salsa Chicken Recipe

Chicken Ingredients:

  • 1 cup salsa
  • 2 cloves garlic (minced)
  • 1 tbs. olive oil
  • 4 boneless/skinless chicken breasts
  • salt and pepper to taste

Chicken Directions:

  1. In a large skillet, over medium heat, sauté the garlic in the olive oil for about 2 minutes.
  2. Add chicken and cook 5 minutes on each side.
  3. Add the salsa, salt and pepper. Continue to cook, covered, over medium-low heat for about 20 minutes.

    Make sure that the salsa you’re using is gluten free. A lot of them use wheat ingredients as a thickener. Around the World Gourmet makes my favorite gluten free salsa. You can find it here: AroundTheWorldGourmet.com
