Gluten Free Zucchini Muffins

Looking to get rid of that zucchini that has been sitting around the house?  Why not make muffins?   Here is a gluten free recipe for zucchini muffins that has gotten some great reviews.

Gluten Free Zucchini Muffins Recipe

Muffin Ingredients:

  • 1/2 c. brown rice flour
  • 1/2 c. sorghum flour
  • 1/4 c. potato starch
  • 1/4 c. tapioca starch
  • 1/2 c. sugar
  • 1 tsp. xanthan gum
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/3 c. oil
  • 2 eggs
  • 2 Tb. milk
  • 1 tsp. vanilla
  • 1 c. shredded zucchini
  • 1/2 c. chopped nuts

Muffin Directions:

  1. Combine the dry ingredients in a mixing bowl. Make a well in the center.
  2. Add the oil, eggs, milk, and vanilla. Stir with a fork to mix well.
  3. Stir in the zucchini and nuts.
  4. Spoon into a greased muffin tin and bake at 400 degrees for 18 minutes.
